These Air fryer Beet Chips and Fries are insanely delicious and guilt free snack that are healthy alternative to traditional potato fries. Flavored with pink salt, black pepper and sesame oil, these air fried roasted beets make a perfect side dish on any occasion!

Roasted to perfection, these Air Fried Beet Chips and Fries are mildly sweet, savory and tender and are a healthy side dish.
Made by matchstick slicing fresh beets and tossing them with a drizzle of sesame oil, salt and black pepper, these beet chips roasted in an air fryer until they turn crispy from out and tender within. These beet fries are not only visually appealing with their vibrant color but also pack a nutritional punch, providing a good source of fiber, antioxidants, and essential vitamins. I have made beet chips two ways- one is by slicing them in matchstick shape for fries and one is thin round slicing for chips. Enjoy these air fryer beet chips and fries as a tasty and wholesome addition to your salad, pasta or have them as is with Tzatziki or any dip.

Ingredients
- Beets- The fresh red beets work best for this recipe. they are sweet, juicy and tender. You may use any local variety of beets- red or yellow.
- Sesame oil- I love the nutty, earthy and strong flavor that comes from sesame oil. Olive oil would work well too.
- Pink Salt and Black Pepper- The Pink salt adds perfect savory depth to these beets. You may us normal salt also.

- Roasted Beet Salad- You can dunk these roasted beets with red onions, walnuts and feta to make a hearty salad.
- Add another seasoning- I love the mild salty and peppery beets. You may experiment with other seasoning like- dried thyme, onion and garlic powder, oregano etc.
- Add Greens-Top these beet fries with fresh parsley, cilantro or thyme.
- Add Protein- You may add roasted tofu or paneer to make a quick protein snack.
- Add Nuts-Add roasted walnuts or cashews.
- Make it Spicy- You may add red chilly or green chilly to make it spicy.

- Fresh beets that are firm, smooth, and free from any soft spots or blemishes work well for this recipe.The smaller beets tend to be sweeter and cook more evenly.
- To ensure even cooking, it's important to slice the beets into thin, uniform strips. This will help them cook evenly. First slice them and then stack up to make match stick stripes of beets.
- The Instructions for making beet round chips is same as that of the beet fries. You may make them 2 ways in 2 batches as shown in the steps of recipe.
- If you roast beet directly in air fryer basket (without parchment paper), they would be more crispy. As you may see, the fries are not very crispy because they were roasted on parchment paper. Choose the method you prefer.
- Coating the sliced beets with a drizzle of salt enhances the flavor and cook them faster.
- To allow uniform and evenly air frying, avoid overcrowding the air fryer basket. Cook them in batches if necessary. Make sure to flip them half way through.
- Air fryers can vary in temperature and cooking times, so keep an eye on the fries as they cook. Adjust the temperature and cooking time accordingly to achieve your desired level of crispness.
Storage Suggestions
It's recommended to consume the beet fries on the same day and as fresh as possible. If you have any leftovers, allow the beet fries to cool completely before storing them. Transfer them to an airtight container. Make sure the container is large enough to accommodate the fries without crushing them and keep it in the refrigerator for about 2 days.
Reheating: If you want to reheat the beet chips, it's best to use a stove top. Air frying them again can make them overly dry. Preheat the oven to a moderate temperature, place the fries on a baking sheet, and heat for a few minutes until they are warmed through.

Detailed Recipe With Steps
Step 1 Wash and Slice the beets
Using a sharp knife, slice the washed beets. You may dry them with a kitchen towel and be prepared for the color bleaching on hands and utensils. Make a stack of slice and chop the beets in match stick form.
You may choose to make round or stick slices as per your preference.
Step 2 Prep Air Fryer
While you chop, preheat the air fryer at 180 ℃| for 10 min. Layer the air fryer basket with parchment paper and place sliced beets evenly in it. Drizzle sesame oil, salt and black pepper.
Step 3 Air Fry The Beets
Air fry the beets for about 10 min at 200℃ flipping them when half way through.
Step 4 Serve It
Serve the freshly air fried beet fries with Tzatziki or any other dip of your choice.
