These Air Fried Cucumber Chips, made with just a few ingredients are such a quick vegan snack! Tossed with olive oil, mustard sauce, red chilly, lemon juice, and turmeric powder, these cucumber chips fried in air fryer are amazingly crispy and tangy!

Air Fryer is becoming my favorite, and I am so much enjoying the recipes I have created with it. These Air fryer Cucumber Chips are amazingly crisp and are oozing with savory and tangy flavors. Frying the cucumbers in air fryer with just a hint of oil and spices is a perfect way to create a low calorie appetizer.
This recipe of air fried cucumber chips is so simple and needs pantry ingredients. While you preheat the air fryer for 5-10 min, the cucumbers coated with oil and spices are ready to be air fried.

Ingredients
- Cucumber-Cucumber is the star ingredient of this recipe. The seedless English cucumbers work best. I have skipped peeling them. You may peel if you like it. Make sure to wash them under tap water. The same recipe can be tried with Zucchini and butternut squash. For beet chips, I recommend avoiding mustard sauce as beets are themselves strong in flavor. You won't like mixing two strong flavors.
- Olive Oil-Olive oil works best, though you may use any vegan oil of your preference.
- Mustard Sauce-I have used a local brand of Mustard sauce which is vegan and gf. You may use any mustard sauce (Dijon) but make sure to read labels if you are looking for vegan and gf options.
- Spices- I have used Turmeric powder and red chilly powder. Feel free to spice it up.
- Salt-Normal table salt works well. You may use rock or Kosher salt too.
How To Make Air Fried Cucumber Chips
Step 1 Wash, Dry and Chop
Wash the cucumber and pat dry with kitchen cloth. Slice them as you like it. I have sliced in round. You may slice them vertically as well. While you do this, you may pre heat air fryer at 190℃ for about 5-10 min.
Step 2 Coat Cucumbers With Oil and Salt
In a large bowl, add chopped cucumbers, salt, mustard sauce, olive oil, spices and a dash of lemon juice. Toss it to coat each cucumber slice.
Step 3 Air Fry
Place the spice-coated cucumber in air fryer basket with spacing and air fry at 190℃ for about 5-10 min (flipping or shaking) mid way through.
Step 4 Serve It
Serve these crispy air fried cucumber chips with a dip of your choice.
Expert Tips
- The seedless English cucumbers work best as they have low water content and would turn out crispy.
- Wash and dry them a day before for the best crunchy taste. If they are not dried, they won't be crispy.
- Serve immediately when the chips are out from the air fryer or else they would turn soggy.

Make sure to dry cucumbers after washing with a dry kitchen cloth. Once they are dried add little oil, salt and spices. Then air fry for crispy cucumbers.
While you may store the left overs in a dry container with a lid at room temperature for a few hours (when you air fried) or for 1-2 days in the refrigerator, I highly recommend you to make as much as needed. This is because air fried veggies get very crispy but lose crispiness when stored for long.

If you don't have an air fryer, you can easily make these cucumber chips in an oven. Follow the recipe steps given in the detailed recipe section. Instead of air frying, use oven and bake the spice coated cucumbers in pre heated oven (10 min @190 °C) at 190 °C for about 15 min flipping ten mid way through.

cucumbers are just not meant to be air fried… maybe if you dehydrate them first then air them.

You may not comment on the recipe without trying it. Dehydration is an added step and not at all essential. If your cucumber is dried completely after wash, the air fryer does a great job of making it crispy! Hope you enjoy it when you make it:)

The cucumbers became slimy after I took them out of the air fryer, and I fried them for over an hour on 180 degrees Celsius. My ajr fryer is very effective, such as for rafting sweet potatoes, but this does not seem to work.
I will absolutely not try again.

Sorry that they didn't turn out well for you. I am really surprised that it would take an hr for cucumbers to be air-fried. Mine took just 10 minutes at 190 deg Celsius, with 5-10 min preheating at the same temperature. They were truly crispy and definitely NOT SLIMY, almost charred rather. Possible reasons can be: 1) The cucumbers were not dried enough and had moisture. 2) This recipe was made in August in India (which is a summer month). If you tried it in winter weather, the time can be more but not an hr. May be another 10 additional minutes.
