A humble mix of crispy and fresh florets of cauliflower and broccoli, smothered in cheese and spices, is a perfect meal for the whole family! Made with simple ingredients and min prepping, this Low-Carb Broccoli Cauliflower Casserole is bursting with umami flavor and is going to be your next favorite!
This Keto Broccoli Casserole is such a flavorful and easy recipe for busy weekdays. I am not a great fan of Broccoli but my daughter loves it. This is the first time I realized how delicious broccoli can be with just one spice- black pepper! Baking it twice is the secret way of making it super side dish!
I loved the idea of mixing the broccoli and cauliflower and didn't use any potato like in my other recipe- Air Fryer Broccoli and Potatoes, Vegan Broccoli Almond Soup, or Paneer Jalfrezi with Broccoli and Keto Greek Salad. Surprisingly, it turned out amazingly delicious with melting mozzarella cheese and cream cheese blend.
The good thing about this loaded cauliflower casserole is that it needs simple pantry ingredients and it is a total no-fuss recipe.
Team this keto casserole with a chickpea salad or a hearty soup for a perfect dinner on busy weeknights!

Ingredients
See the recipe card for full information on ingredients and quantities.
- Cauliflower Florets- While you may use frozen cauliflower, fresh cauliflower works best and adds a mild, nutty flavor and a hearty texture to the casserole. It absorbs the savory flavor perfectly.
- Broccoli Florets -I prefer using fresh vegetables. The fresh Broccoli adds vibrant color and a slightly peppery taste, complementing the milder cauliflower. Its firmness ensures a delightful crunch in every bite: You may use green beans, green onions, asparagus, and potatoes as well.
- Olive oil- Olive oil is the best oil and it helps achieve a crisp exterior. You may use avocado oil or any other vegetable oil.
- Cheese- I have used a blend of Mozzarella and cream cheese. Cream cheese adds a velvety, creamy texture to the casserole and Mozzarella binds everything together with a perfect cheesy taste. You may use sour cream, heavy cream, or any type of cheese of your preference.
- Salt and pepper-Salt and Pepper balance the flavors. You may also use onion powder, garlic powder, or oregano.
- Cilantro (optional)- Garnish with Fresh cilantro leaves to add vibrant color to this casserole.
How to Make Cheesy Broccoli Cauliflower Casserole
Step 1. Wash, Dry, and Chop the Vegetables
Wash, dry, and cut cauliflower and broccoli into bite-sized florets. This step can be done ahead of time- a day or night before.
Step 2. Bake Veggies
In a sheet pan, apply olive oil and spread the florets of broccoli and cauliflower. Sprinkle a little salt and black pepper and brush with olive oil. Bake for about 10 min or till lightly browned in a preheated OTG at 150 deg C.
Step 3 Make Creamy Cheese Sauce
While the veggies are baked, you may prep the cream cheese sauce. In a small bowl, freshly grate the Mozzarella cheese and add cream cheese to it. Spice with salt and black pepper and mix it well.
Step 4. Bake The Casserole
Once the veggies are baked, transfer them to the cream cheese mixture and mix well. Transfer mixture to a greased baking casserole dish. You may top it with shredded cheese and bake in a preheated OTG (you may use the oven as well) at 375°F (190°C) for approximately 10 minutes or until the cheese starts melting and gets browned.
Step 5. Serve It

Variations
- Another Cheese: Add a generous layer of shredded cheddar or mozzarella for an extra cheesy kick. Feel free to use Parmesan cheese as well.
- Add Protein: You may add Paneer (Indian cottage cheese) or Tofu for protein. You may also add chicken broth to the cheese mixture.
- Spice It Up: For a zesty twist, sprinkle some red pepper flakes or your favorite hot sauce.
- Add tangy flavor- Top this casserole with lemon juice for a tangy hint of flavor.
Expert Tips
- I suggest NOT blanching as that makes broccoli and cauliflower a bit soggy. Wash and dry them before use for best results to avoid any excess water they may have absorbed. I have roasted them in OTG for about 10 min before mixing them with cheese. This makes them crisp and double roasting in OTG makes them more crispy.
- The roasting of chopped cauliflower and broccoli can be done in an Instant pot, oven or air fryer as well.
Storage Suggestions
Any leftovers of this cheesy casserole can be stored in an airtight container in the refrigerator for up to 3-4 days. You may also freeze this casserole dish in an airtight freezer-friendly container for up to 2 weeks.
Reheat the refrigerated leftovers in an oven or an air fryer for 5-10 min before serving. Pls, note that frozen leftovers can be thawed overnight before reheating.
What to Team This Broccoli Cauliflower Casserole With?
This low-carb casserole can be served with Brown Rice, Pumpkin Rice, Chicken Breast, Apple Cucumber Salad, Beet Dip, Air Fryer Paneer Tikka, Onion Fritters, or a gravy dish- Vegan Meatballs, Punjabi Chana Masala, Palak Paneer for a complete meal.
