For The Apple Salad
- Red Apples- Sweet red crisp apples that are juicy too work best for this recipe. You may choose any good quality local variety. The same recipe can be tried with peaches and guava.
- Cucumbers- I have used English or Persian Cucumbers. I love the mild sweetness that comes from them. While one may use regular cucumbers. I find Persian ones better as they have fewer seeds and I don't have to worry about their being bitter. One may try Zucchini, carrots, celery, or lettuce.
- Mint Leaves- Fresh Mint leaves add the perfect color and aroma to this salad. While other greens can be used, I love the refreshing salad made by using fresh mint leaves.
For The Salad Dressing
- Peanut Butter- Coating the salad with peanut butter makes it creamy and gives it a melt-in-mouth texture.
- Maple- While the apples are sweet and juicy, adding a hint of maple makes it sweeter and you may skip it. One may use honey as well. But then the salad won't be vegan.
- Lime Juice- Sweetness and savory flavor blended with mild tangy flavor from lemon juice make this salad totally versatile. You may swap it with balsamic vinegar or white wine vinegar for the perfect tangy flavor.
- Salt & Black Pepper- Salt and black pepper powder help balance the overall flavor of the salad.
How To Make Easy Apple Cucumber Salad
Step 1 Chop The Veggies
On a chopping board, chop the cucumbers, apple and mint leaves as desired. I have chopped as well as peeled the cucumbers. The thin peels have been rolled and placed at the top of the salad to make it look appealing.
Step 2 Prep The Dressing of The Salad
In a large bowl, add peanut butter, maple, lemon juice. Add salt and black pepper. Give it a good mix.
Step 3 Toss Chopped veggies with the Dressing
Toss the chopped apples, cucumbers, and minced mint leaves with the freshly made peanut butter dressing and let it sit for 5 min on the kitchen counter to blend in the flavors.

Easy Cucumber Apple Salad
Equipment
- A large Bowl for mixing
- Chopping board
Ingredients
- 1 medium Apple chopped without peeling
- 1 large cucumber sliced in thinned layers
- 2-3 tablespoon fresh mint leaves chopped
- 2 tablespoon peanut butter chunky or plain
- 1 tablespoon Maple Syrup
- 1 teaspoon black pepper
- a pinch salt
- 2 teaspoon lemon juice
Instructions
- Gather all the ingredients and wash them under running water.
- Sort and chop the mint leaves. Make sure to wash them under tap water.
- Slice apple in small chunks. I have preferred it with skin. Peel 5-6 thin layers of cucumber and then chop it as desired.
- Once the chopping is done, keep aside the chopped salad.
- Add peanut butter to a large bow. Add maple syrup to it. Mix well
- Add lemon juice, salt and black pepper and give it a good mix.
- Add chopped salad and mix well.
- The delicious Apple Cucumber Mint Salad is ready!
