I am always looking to save my time and oil in the kitchen and making these Vietnamese Air Fryer Rice Paper Dumplings was so easy and super healthy! With a handful of easily available ingredients and, a little oil, you may make these healthy gluten free and Vegan Air fryer Spring Rolls.
Stuffed with crunchy and freshly chopped veggies, and smothered with olive oil, these rice paper rolls are so delicious, hearty, and packed with nutrition. While one may saute the vegetables for the stuffing, I gently tweaked the recipe and saved the time to saute them by using them fresh and raw. You may pan fry the rice paper wraps in a non-stick pan as well. I found the air-fried method quicker for getting the best crispy rice paper spring rolls.
Each bite of these rice paper wraps oozes the umami flavor that comes from salt and pepper mixed vegetable filling and was a hit in the family!

Ingredients
- Rice Paper Sheets- I have used a local brand of rice paper sheet- Real Thai Rice paper, which is gluten free and vegan. It's made of white rice and tapioca flour. Rice paper sheets are thin, translucent wrappers, and are commonly used in Asian cuisine, especially for making spring rolls and dumplings. They become soft and pliable when soaked in warm water, making them easy to work with. You may use regular spring roll sheet for the same recipe. This recipe can also be used to make Lettuce rolls by filling the chopped veggies in a large leaf of lettuce and rolling it up.
Filling ingredients
- Lettuce-I have used green lettuce called Loose-leaf lettuce. You may use any local variety. Rich in Vitamin A, it adds soft and buttery flavor to these rice wraps. If you can't find lettuce, cabbage, spinach or kale leaves would work well as well.
- Carrot- We have orange carrots available in India during this time of the season. I have sliced them. You may grate or mince them as you like. It adds vibrant color and nutrition. You may use zucchini or bell pepper as well.
- Onion-Red Onions work best. You may use white onions, green onions, chives or scallions as well. They add mild sweet and crunchy flavor.
- Cucumber-I have used English cucumber and I love that they are without seed and are mild sweet and add perfect volume and texture. You may swap them with radish.
- Olive Oil-Olive oil works well. You may use any vegetable oil or sesame oil for more intense flavor and browning.
- Salt and Black pepper- I have seasoned with Pink salt and black pepper. You may spice it up as per your preference. I wanted it bland to have the real flavor of salad in the rolls with the sauce.
- Coriander Leaves- Garnishing can be done with fresh cilantro or coriander leaves.
- Dipping Sauce- I have made a quick dip by adding sesame seeds to soy sauce and sweet red chili sauce. You may use Tamari sauce, or any of your favorite dipping sauces.
How To Make Air Fried Rice Paper Wrappers
Step 1 Wash, Chop and Mix
Gather the vegetables of the season. Wash, dry, peel and chop as you desire.
In a large bowl, add the chopped vegetables - cucumber, carrot, lettuce, onion, green bean and mix with salt and pepper. You may saute the veggies in a pan on stove top. Remember, the veggies would leave some moisture and that's the reason we need not soak the rice paper longer in water.
While you prep, pre heat Air Fryer at 190 deg C for about 8 min.
In a large bowl of cold water, soak the rice paper sheet for just 2 seconds (soaking it in water and flipping once) and place it on a rolling pin or any firm surface like a wooden board. Make sure to wet the surface. A damp surface ensures that rice paper doesn't break. Place the toppings in the lower third middle of the rice paper as shown.
Fold it sideways first and then fold from the top to wrap it completely.
NOTE: I highly recommend not using hot water or a small bowl for wetting the rice sheet. It will break the sheet.
Step 3 Grease the rice paper dumplings and Air Fry
You may roll all the rice paper sheets into stuffed dumplings and carefully place them on a large plate. They may become tender and sticky. You may coat them gently with olive oil and brush the air fryer basket with oil as well. Greasing the rice paper with oil is an important step to ensure crispy dumplings.
Place the oil-coated rice paper dumplings in the air fryer basket at 190 degrees C for about 10 min or till browned for air frying. Shake the basket mid-way for uniform cooking
Step 4 Serve It
Serve the Crispy Air Fryer Vegan Rice Paper Dumplings with soy sauce or sauce of your choice.
Variations
- Baked Rice Paper Dumplings- This version of air fried rice paper rolls is very quick to gather. If you wish to bake them, preheat your oven to 190°C and brush the rolls with oil. This will help them become crispy in the oven. Place the prepared rice paper dumplings on the lined baking sheet, leaving some space between them to allow for even cooking and bake for about 10-15 minutes, or until the dumplings are golden brown and crispy. You may want to flip them halfway through the baking time to ensure even browning on both sides.
- Sweet Dumplings- The same recipe can be converted to a quick dessert by stuffing the rice paper with sliced bananas, Nutella or cream cheese.
- Add another Protein- You may add a source of protein like chicken tender, minced pork or Paneer. But then the recipe won't be vegan. For vegan swaps, add a filling of prepared or scrambled Tofu.
- Add another Vegetable- Add Mushrooms, pumpkin or eggplant filling. But then you have to saute the filling to place it in these crispy rice rolls.
- Add Spicy Kick- You may add the heat by adding red chilly powder or pepper flakes.
- Add Tangy flavor- You may use pickled cucumbers, beets or onions to add a hint of tangy flavor to the otherwise simple stuffing.
Expert Tips
- Rice paper sheets are very fragile to work with. If not soaked in water properly, they turned out brittle. If soaked for longer, they would become soggy and tear off.
- The best approach is to use normal water (not warm water, unless you are having peak winters). Dip the rice paper sheet in a bowl filled with water for just 2-3 sec (soak it in a large bowl of water and flip it to take it out) and place it on a rolling pin or a flat surface that is a bit wet. When you start placing filings, you would start feeling the softness of the rice paper and how easily it can fold up the way you want.
- When wrapping the dumplings, start by folding the sides in first, then roll from the bottom up, similar to rolling a burrito. Ensure the edges are sealed tightly to prevent filling from falling out during cooking.
- You may brush the rolled rice paper dumplings with olive oil for crispy exterior.
- The left over vegetable filling can be used as a salad.
- You don't need to flip the rice dumplings but mat shake the air fryer basket half way through.
How To Make Pan Fried Rice Paper Dumplings?
While the air fried rice paper rolls are so easy to gather, but if you don't wish to use air fryer, you may use the stove method as well. Heat a pan (cast iron or non-stick) and grease it with oil. Make sure to heat it for 3-4 on full flame and then slow the flame. Rice paper can be sticky and if it's placed on cool tawa, it would stick more.
Place the rice paper dumplings with gap and apply little oil on them. Cover with lid as it helps to cook faster. Flip them when browned from bottom to cook from the other side. It takes about2-4 min to cook from one side.

- 1 Air Fryer Instructions to bake and make in Pan are given
- 1 Chopping board
- 1 Mixing bowl
- 1 bowl for water soaking rice paper sheet
- 1 Rolling Pin slab or any firm surface would work to make rice paper rolls
Ingredients
For The Filling
- 1 medium onion chopped in small
- 1 medium carrot sliced in small
- 1 small cucumber chopped in small chunks
- 1 leaf lettuce chopped
- 1 teaspoon black pepper adjust the heat
- salt as per taste
For The Dipping Sauce
- 1 tablespoon soy sauce
- 1 teaspoon sesame seeds
- 2 teaspoon sweet chili sauce
Rice Paper Rolls
- 8 sheets rice paper sheets any good quality brand, I have used small diameter sheet.
