Indians have special affinity towards Paneer dishes. Whether it's a daily meal, a veg snack for a planned family dinner, Paneer dish is the dominant for the vegetarians. This chewy humble food has no flavor of its own and easily blends with the flavor of the dish. It's popular among the gravy dishes, desserts and starters. Personally, making a meal at the last moment means I would grab the paneer from the refrigerator and make a scrambled paneer, Paneer stuffed Paratha or paneer in rich tomato gravy and meal gathers in no time.
These Easy Paneer Recipes are inspired from my mother-in-law's recipes and most of them are made in Desi ghee. Those readers who already read my blog are well aware of my love for Desi ghee. That said, these recipes are easily customizable. Trust me, Paneer and ghee is a match made in heaven!

What is Paneer?
Paneer is an Indian cottage cheese that's made from curdled milk by adding lemon juice. It is a fresh non-melting soft cheese that is a common ingredient used in northern Indian cooking. It is a rich source of protein and calcium. People looking for a low calorie food may include low fat paneer (made from low fat milk) in their diet in order to be satiated for long. Paneer has a mild, milky flavor and a dense crumbly texture that goes beautifully well with strong spicy flavors used in many classic Indian dishes.

These paneer recipes are made healthy in a simple homemade way and are very close to the taste of the restaurant style dishes and in some cases outshine them as well. One of the best and popular recipes is that of Palak Paneer (Paneer in Spinach Gravy).
This was a great hit in the family, and everyone synonymous agreed that restaurant food requires unnecessary reheating and re-tempering with ghee, which not only adds to the calorie count but is not good for the heart. The fresh addition of Mirch ki Tari (red chilly Spicy Gravy) once is totally optional but is good, as Green leafy vegetables are meant to keep us warm in winter when combined with desi ghee.
Given our busy life, most of us prefer purchasing the market paneer. Popular brands in India are Mother Dairy and Amul. Whenever I have time, I prefer making Paneer at home. For making Homemade Paneer use full fat or low fat milk. Boiling it on simmer and adding lemon juice. Gradually the milk tends to thicken up. Once it curdles fully, you may put it in colander and keep it in muslin cloth for setting up. I would be adding more to this collection and would love to know your favorite paneer recipes.

Is paneer healthier than cheese?
Cheese is healthy, but it has high amounts of saturated fat and cholesterol which makes it bad for your heart. A 100 g serving of cheese has 18 g of saturated fat and 100 mg of cholesterol, whereas 100 g of paneer has 1.7 g of saturated fat and 17 mg of cholesterol. Hence, paneer is a better option. [1]
You can eat paneer at night, at least one hour before sleeping. Our muscles, height and everything grow while we are sleeping, so for that our body needs proteins and Paneer is a good option. You can also eat it during lunch time. But avoid the excessive intake during the day
