While one may always buy the juices, this homemade beet juice recipe promises the use of fresh ingredients in a budget-friendly way. Also, you may always control what ingredient to use and how much to use them to enhance the flavor and nutrition of the juice.
You may use the juicer or blender to get the fresh beet juice. Since beets are earthy and bitter, I have added sweet lime to balance that off. You may add sugar as well. Though juices seem to be summer friendly (this one is also made in summers), this beet juice can be made anytime of the year. We wait for winters to have sweet carrot beet juice as it nourishes the body greatly and keeps it warm.

Ingredients
- Beets- are the star ingredients of this juice as they impart vibrant color and amazing nutrition value to it. I have used fresh red beets and you may use any local variety. Make sure to wash the beets properly as they are muddy and this part takes more time than the entire recipe.
- Carrot-Carrots and beets go well together. This is summer time here and I have orange carrot. But in winters, we have really juicy and sweet red carrots that are best for this beet juice recipe. If you can get hold of those carrots, I would recommend using them.
- Sweet Lime- Since beet is bitter, I wanted to balance the flavors and added 2 sweet limes. One is ripe enough to look like orange. Oranges wok well as well. You may add apple or berries too.
- Lemon Juice- I find any juice incomplete without the addition of little lemon juice. The tangy flavor adds depth to the overall flavor of this juice.
- Ginger- adds warm notes. In winters, I add slightly more ginger because of its ability to ward off cold and cough naturally.
- Mint Leaves- Adds the aromatic and cool sensation. You may use cilantro as well.
- Pink Salt- Addition of salt balances the bitter flavor that comes from beets. You may use normal salt too.

- Add More Fruits: Try your favorite berries to this beet juice to add a burst of fruity flavor or tropical fruits like pineapple and mango.
- Add More Greens: Boost the nutritional value of your beet juice by adding a handful of leafy greens like spinach, kale, or Swiss chard.

When we juice fruits and vegetables, we lose the fiber component from them. I suggest having both fresh fruits and their juices interchangeably to have a change in your diet style.

- Choose beetroots that are firm, smooth, and vibrant in color. Avoid beets that are soft, wrinkled, or have blemishes.
- Beets are full of mud. Wash the beetroots thoroughly to remove any dirt or debris. Trim off the leafy tops, leaving about an inch of the stem intact. You can peel the beetroots if desired, although the skin is edible and contains beneficial nutrients. I always use peeled beets in my recipes.
- Cut the beetroots into smaller pieces to fit into your juicer chute easily. You can mix ingredients while juicing.
- You may use apples if you like more sweet and to balance the bitter flavor that comes from beet in the Ratio 4:4:2:1 for apple, carrot, orange/sweet lime and beet.
Storage Suggestions
Beet juice is best consumed fresh to retain its flavor and nutritional benefits. I would not recommend to keep any leftovers in the refrigerator. Consume it within 15 min of the making.

How To Make Beet Juice
Using Juicer
Step 1. Wash and Chop
Since beets are roots, make sure to wash them properly under running water to remove the mud. Peel it off and chop it into small chunks so that they blend easily in juicer. You may peel sweet lime, ginger and carrot as well.
Wash the fresh mint leaves and remove the stems.
Step 2. Add into Juicer
In a juicer (I have used Philips Juicer), add a mix of fruits so that it doesn't get stuck. I added carrots, then sweet lime and then ginger and beet. It may take a while to get the juice coming. Keep pushing the chute down carefully. gather the fresh juice in a jar below the funnel.
Step 3. Spice It
Sprinkle pink salt and add lemon juice. Have the vibrant and healthy beet juice within 15 min of the making.
Using Blender
Before I had purchased the juicer, I used blender to make juice of any fruits or veggies.
Step 1. Wash and Chop remains same as given above.
Step 2. Blend It
Add everything into blender and blend it for 2-3 min or till the mixture is smooth.
Step 3. Sieve It
Using a cheesecloth or a strainer, squeeze the juice from the smooth mixture made in the above step.
Step 4. Serve It
Top the blended juice with salt and lemon juice and enjoy.
