Since ages Indians have been drinking the amazing Haldi Doodh or Turmeric Milk or raw haldi ka doodh. The Indian food is incomplete without the addition of this incredible spice. This warm beverage requires just a handful of ingredients – milk, raw turmeric root, sugar, and a hint of black pepper.
Simmered on slow flame, this recipe allows to assimilate the flavors that come from raw turmeric root (looks like raw ginger root) and black pepper. While one may use turmeric powder, I highly recommend trying this recipe with raw turmeric to get the real flavor.

What Is Turmeric Milk?
Originating from India, turmeric has been a staple in Ayurvedic medicine for centuries. This golden spice has traveled across world and got wonderful recognition. The Western world has also embraced turmeric milk in recent years. Research on the health benefits of curcumin, the active compound in turmeric, has contributed to its popularity as a wellness drink.
Turmeric milk is made by heating milk with raw turmeric root or turmeric powder.

- Milk: Dairy Milk works well. I have used low fat milk. Feel free to use vegan milk-coconut milk, almond milk or full fat dairy milk. I won't suggest using milk powder for this recipe.
- Raw Turmeric: Similar in looks to ginger root, you may find raw turmeric in local Indian stores. I have grated it fresh. You may use dried turmeric root also. You may crush it with pestle into a coarse powder or use as is. You may use turmeric powder as well. The best taste comes with raw turmeric and it's a bit strong. So I suggest you start with little quantity to begin with.
- Sugar (adjust to taste): I always add sugar to milk or milk tea to avoid any gastric issues. You may use sugar free or maple syrup.
- Black Pepper: Whole black peppercorn works best. you can use black pepper powder as well. But don't skip on this one. It adds amazing flavor and the combination of this with turmeric helps in the healing.
How To Make Golden Milk
Step 1 Prepping Milk
In a saucepan, heat the milk over medium heat. Add whole black peppercorns and sugar.
Step 2 Add Raw Turmeric
Grate the raw turmeric and add it to the milk. Stir well and let it simmer for about 8-10 minutes, ensuring it doesn't boil over. I have also added a bit of dried raw turmeric (it's optional).
Step 3 Strain and Serve
Strain the Turmeric Milk to remove any remaining turmeric bits. Pour the warm, golden milk into your favorite mug.
Variations
- Add another spice- Feel free to add clove, saffron, cinnamon or any other spice of your choice.
- Add Honey or Maple Syrup- I suggest avoiding honey as in Ayurveda we don't heat Honey. You may add maple syrup though.
Expert Tips
- Make sure to cook in a heavy bottomed sauce pan to avoid burning of the milk. Also to cook on slow flame throughout.
- Make sure to consume the turmeric milk as fresh as possible. If you have leftovers, try to consume within a day.
- Start with low quantity of turmeric as it may taste bitter if you are not used to the taste. 1 teaspoon of raw turmeric (fresh) is fine to begin with.
- There will be a color discharge from raw turmeric. Use a kitchen cloth for managing it.

Authentic Turmeric Milk (Haldi Ka Doodh)
Equipment
- 1 grater
- 1 saucepan
Ingredients
- 1 inch raw turmeric 1 teaspoon turmeric powder or 2 teaspoon raw turmeric root when freshly grated
- 2.25 cups milk
- 1.5 teaspoon sugar adjust as per taste
- 5-7 whole black pepper corns 5 whole pepper corns crushed or 1 teaspoon black pepper powder

- In a saucepan, heat the milk over slow heat. Add sugar and whole black peppercorns.
- Freshly grate the raw turmeric (2 tsp) and add it to the milk. Stir well and let it simmer for about 8-10 minutes, ensuring it doesn't boil over.
