    These Air fryer Cucumber Fritters, coated with oats flour and spices have amazing crispy exterior and a melt-in-mouth interior. Made quickly in little oil, these air fryer no breaded cucumber chips or fries gather in less than 20 min. Dunk them into a dip of your choice for a quick healthy and vegan snack!

    These addictive and flavorful Air fryer Cucumber Fritters with perfect texture are best way to indulge in low carb snacks. Can you believe these are made in just 2-3 teaspoon of olive oil? If you are looking for a healthy alternative to deep fried fritters, you would love these air fried cucumber chips.

    Crisp, golden-brown bites of the freshly chopped cucumber slices coated with salt, red chili, turmeric powder, dunked in cornflour batter and smothered with olive oil and oat flour are perfectly air fried in 15 min.

    While you may use panko breadcrumbs to make crispy breaded cucumber chips, I wished to make a gluten free vegan cucumber snack and oats flour worked really well- the perfect replacement of bread crumbs.

    Ingredients

    • Cucumber- Cucumber is the star ingredient of this recipe. English cucumbers without seed work best as they don't have high water content and can be easily made crispy. You may try using any local variety of cucumber as well. The other vegetables that can be used to make fritters using this exact recipe include Zucchini, Butternut squash, Beet, carrots or pumpkin.
    • Corn flour- works best to make these fresh cucumbers crunchy. I had made a batter of corn flour with little water to coat over cucumbers. You may also make Chickpea batter or almond flour mixed with milk.
    • Oats Flour- The crunch comes best when the cucumbers are soaked in cornflour batter and then again coated with breadcrumbs or oat flour before air frying.
    • Olive Oil- Olive oil adds much needed depth to these cucumber fritters. You may use any vegan or vegetable oil of your choice.
    • Spices- I love adding red chili powder and turmeric to my savory snacks. Feel free to adjust the ratios and add any spice of your choice- cumin powder, garam masala, etc.
    • Lemon Juice (Optional)- Just like any other snack, adding lemon juice adds perfect tangy flavor.
    • Salt- Normal salt works well. You may use sea salt too.

    Variations

    • Air Fryer Zucchini Chips- Try the same recipe to make crispy zucchini chips.
    • Add leafy greens- You may experiment making Kale or spinach chips by using a single leaf soaked in spices and corn flour batter, coated with oats flour and olive oil for air frying. The other way can be to chop the green leaves in small chunks. Add corn flour mixture, spices, salt and oil. Now add bread crumbs or oat flour and make small round patties and air fry them.
    • Add Cheese-Top the crunchy cucumber fritters with vegan or any cheese of your choice for a hearty snack.
    • Add another spice- Feel free to add oregano, soy sauce or any other spice of your choice

    Expert Tips

    • Make sure to dry cucumbers after washing and before slicing or else they won't be crispy. While you may peel them, I like the fritters with peel.
    • When using air fryer for making chips, usually there is not much need to flip the vegetable. Just shaking is fine. But since this is oat coated fritter, I had flipped it to cook from both sides for browning.
    • Apply oil over fritters and air fryer basket for non sticky frying.
    • Serve the fritters fresh as they lose crispiness if stored for long.

    How To Make Cucumber Fritters in Oven

    This recipe of air frying cucumber works fine if you want to bake the fritters in oven. You may have to pre heat the oven at 220°C for about 10 min and bake for 15-20 minutes, or until the fritters are golden brown and crispy. You may want to flip them halfway through the baking time for even crispiness.

    How to store left over cucumber fritters?

    While the left over cucumber fritters may be stored in a dry container with a lid for about 1-2 days in the refrigerator, I recommend consuming them fresh as they lose crispiness when stored.

    Do cucumbers taste good cooked?

    The best way to consume cucumbers is having them raw. I may suggest trying this recipe of cucumber fritters as they tasted similar to zucchini or eggplant fritters.

    Detailed Steps To Make Air Fried Cucumber Fritters

    Step 1 Wash, Dry, Chop

    Wash the fresh cucumbers and dry them with a kitchen cloth. Slice them round with ¼ inch thickness or as desired.

    Too thin slices can't hold the coatings.

    While you prep cucumbers, pre heat air fryer at 190 ℃ for about 5-10 min.

    Step 2 Spice, Coat and Prep Cucumber Fritters

    In a large bowl, add sliced cucumbers and mix them with salt, turmeric powder and red chili powder.

    If you don't have oats flour, you may dry grind good quality rolled oats or use breadcrumbs.

    In small bowl, mix cornflour with water to make a not-so thick paste or batter. The batter should stick to cucumber when dunked into it. Roll the cornflour coated cucumber with oats flour from all sides and place in a plate.

    Do this with all the cucumber slices.

    Step 3 Air Fry

    Grease air fryer basket with olive oil and place the cucumber fritters at even gaps. Brush oil over the fritters too. Air fry these fritters for about 10-15 min or till browned at 190 ℃. Make sure to flip them half way through to cook from the other side as well.

    Step 4 Serve It
