Ingredients
- Cucumber- Cucumber is the star ingredient of this recipe. English cucumbers without seed work best as they don't have high water content and can be easily made crispy. You may try using any local variety of cucumber as well. The other vegetables that can be used to make fritters using this exact recipe include Zucchini, Butternut squash, Beet, carrots or pumpkin.
- Corn flour- works best to make these fresh cucumbers crunchy. I had made a batter of corn flour with little water to coat over cucumbers. You may also make Chickpea batter or almond flour mixed with milk.
- Oats Flour- The crunch comes best when the cucumbers are soaked in cornflour batter and then again coated with breadcrumbs or oat flour before air frying.
- Olive Oil- Olive oil adds much needed depth to these cucumber fritters. You may use any vegan or vegetable oil of your choice.
- Spices- I love adding red chili powder and turmeric to my savory snacks. Feel free to adjust the ratios and add any spice of your choice- cumin powder, garam masala, etc.
- Lemon Juice (Optional)- Just like any other snack, adding lemon juice adds perfect tangy flavor.
- Salt- Normal salt works well. You may use sea salt too.
- You may add leafy greens like spinach, kale, or cilantro.
How To Make Air Fried Cucumber Fritters
Step 1 Wash, Dry, Chop
Wash the fresh cucumbers and dry them with a kitchen cloth. Slice them round with ¼ inch thickness or as desired.
Too thin slices can't hold the coatings.
While you prep cucumbers, pre heat air fryer at 190 ℃ for about 5-10 min.
Step 2 Spice, Coat and Prep Cucumber Fritters
In a large bowl, add sliced cucumbers and mix them with salt, turmeric powder and red chili powder.
If you don't have oats flour, you may dry grind good quality rolled oats or use breadcrumbs.
In small bowl, mix cornflour with water to make a not-so thick paste or batter. The batter should stick to cucumber when dunked into it. Roll the cornflour coated cucumber with oats flour from all sides and place in a plate.
Do this with all the cucumber slices.
Step 3 Air Fry
Grease air fryer basket with olive oil and place the cucumber fritters at even gaps. Brush oil over the fritters too. Air fry these fritters for about 10-15 min or till browned at 190 ℃. Make sure to flip them half way through to cook from the other side as well.
Step 4 Serve It
The Crispy and browned Air fried Cucumber Fritters are ready to serve. Team them with tomato ketchup or a sauce of your choice.
