    Made with just 3 ingredients, this Wheat Halwa Recipe is packed with flavor and is a perfect Indian dessert- An easy quick recipe for festivals.

    Imagine so much deliciousness in each bite of Wheat or Atta halwa. I need a few reasons to make it- birthdays, festivals, and of course monsoon. A simple recipe that uses wheat flour (Atta), Ghee and sugar. This is my family recipe of North-Indian Style Halwa.

    For those who are wondering what halwa is: It is a soft, pudding-like texture and is known for its rich and sweet taste. The wheat flour is cooked in ghee until it turns golden brown, then mixed with sugar syrup and topped with cardamom and nuts of your choice.

    I will not suggest making this recipe vegan as for the best taste, Ghee is an essential ingredient.

    Ingredients

    • Wheat flour- I have used local flour mill's Wheat flour. The same recipe can be used to make Besan (gram flour) halwa or Suji halwa. The ratio of water will vary a bit.
    • Ghee- is the star ingredient as roasting wheat flour in ghee adds an aromatic and amazing flavor. I suggest making this recipe with Ghee only.
    • Sugar- I have used white granulated sugar and suggest using the same. Jaggery or other sugar may vary the taste significantly.
    • Green Cardamom- Ground cardamom works best. Pls don't add cinnamon or any other spice. Just cardamom else you will miss the real flavor.
    • Water- We use water to make sugar syrup. The ratio is Atta, water, sugar: 1 part Atta , 3 parts water, 1.5 parts sugar
    • Toppings- Nuts like raisins, almond and cashews. (optional) Pls Note I have used nuts and coconut for the image as my family likes plain halwa.

    How To Make Wheat Halwa

    Step 1. Gather Ingredients

    Make sure to measure the wheat flour, sugar and water correctly. The best way is to use one bowl for each (if you don't have measuring cup).

    Step 2. Sauté Wheat Flour in Ghee

    In a large, heavy-bottomed wok or pan, add ghee over slow heat. Allow the ghee to melt completely. Add wheat flour and roast it on slow flame. Stir continuously to mix the flour with the ghee and cook until the mixture turns golden brown and releases a nutty aroma. This process usually takes about 7-10 minutes. But slow roasting is must for best flavor. Don't roast wheat flour without ghee.

    Step 3. Make Sugar Syrup

    While the wheat flour is roasted, in another pan, add water and sugar and make a sugar syrup. You just need to boil it till sugar dissolves. Switch it off and let it cool off. (refer last image above)

    Step 4. Add sugar Syrup to roasted wheat flour

    Carefully pour sugar syrup into the wok with roasted wheat flour. Be slow and add it in batches as there would be spluttering. Keep stirring till the halwa thickens and becomes a whole one lump leaving the sides of the pan.

    Step 5. Garnish and Serve

    Top coarsely grounded cardamom and Once the wheat halwa is ready, transfer it to a serving dish. You can serve it warm or at room temperature.

    Expert Tips

    • Measure the ingredients properly.
    • Roasting wheat flour in ghee is highly recommended. You can make this recipe quicker by roasting flour without ghee but that won't give you the best flavor.
    • Make sure to add sugar water carefully and keep sautéing so that no lumps are formed.
    • You can store this Halwa in the refrigerator for about 2-3 days.

    Equipment

    • 1 heavy wok for roasting wheat flour
    • 1 Sauce Pan for making sugar water.

    Ingredients
      

    • 1 small bowl Wheat Flour (Atta) Size of bowl is subjective. Would suggest you to take a small bowl around (50gm) and use that for all other ratios.
    • 1.75 small bowl sugar
    • 5-6 tablespoon Desi Ghee
    • 6-7 Small Eliachi (cardamom)
    • 3 bowl Water
