Fresh Tomatoes Flavorful and creamy without any cream Kids Friendly Vegan & Gluten Free

Fresh Ripe Tomatoes (can use cherry tomatoes  as well) garlic cloves olive oil salt , black pepper lemon juice coriander leaves/ cilantro/ basil leaves

COOK  TIME: 20 MIN

Step 1

Roughly Chop tomatoes and garlic and place them on a greased baking tray evenly. Wile you prep, pre heat oven at 190 deg C for 10 min.

Sprinkle olive oil, salt and black pepper and roast the tomatoes and garlic in oven for about 15-20 min or till tender and browned.

Let the roasted tomatoes and garlic cool off.

Blend to make a smooth paste. While you may sieve this to make soup, I like it without sieving.

In a heavy bottomed pan, heat olive oil, add tomato garlic paste and cook on slow flame for about 3 min.

It's naturally thick. Add salt, black pepper and water as per the consistency. you want. Let it cook on slow flame for 5-8 min.

Step 7

Top it with a drizzle of cream and basil/ cilantro leaves. Serve with bread of your choice.
