I am not quite bored with soups yet. Tomato soup is very close to my heart and I love it's variations that I have curated: roasted tomato garlic soup, tomato ginger garlic soup, vegan tomato soup (no oil).
I made this Tomato Rice Soup for my daughter who had congestion and didn't feel like eating chapatis- It is definitely The best Super comfort meal! A very quick one pot recipe of simmering freshly grated tomatoes and then cooking rice in it over the slow flame.

Ingredients
- Basmati Rice- Any good quality rice works well. I have used basmati rice. While one may use leftover boiled rice, I made this rice soup from scratch using raw rice.
- Fresh Tomatoes- I love the tangy flavor that comes from fresh tomatoes. They add great texture to this soup.
- Fresh Garlic- Fresh garlic adds best aroma and strong flavor to this soup.
- Green Chilies(optional)- The blend of savory, tangy and spicy tastes best in soup. You may adjust the heat.
- Lemon Juice- Freshly squeezed lemon juice works best.
- Salt and Black Pepper
- Water as needed
- Cilantro for garnishing
- Variations: Feel Free to add any other veggies of your choice.
How To Make Tomato Soup With Rice
Step 1. Wash and Prep Rice
Wash tomatoes and grate them. Also grate garlic. Wash and soak rice while we cook tomatoes.
Step 2. Sauté Garlic & Tomatoes
In a sauce pan, heat sesame oil and add minced garlic and chopped green chilies and sauté until it becomes fragrant. Add the grated fresh tomatoes to the pot and cook until they become soft. I add salt and black pepper to speed up this process.
Step 3. Add Rice
Remove water from soaked rice and add it the cooked tomatoes. Add water to soak rice on inch deep. Cover with lid and let the rice cook on slow flame. It takes about 5-10 min depending on the quality of rice.
Step 5. Cook the Soup
Soup with rice would start thickening up as rice gets tender and cooked. Add more water if needed. Once the rice is cooked fully, you may add lemon juice it.
Step 7. Serve
The delicious Tomato Rice Soup is ready. Top it with fresh cilantro leaves and Serve it with a bread crust of your choice!
Expert Tips
- Cooking with lid on helps cook rice faster.
- I have used Basmati rice which cook really fast, even though I soaked them for just 10 minutes while prepping.
- Use a heavy bottomed pan so that rice don't stick to bottom of the pan.
- It is best to add more water while cooking rice as they will anyway soak up any extra water and you can adjust consistency of soup anytime.
- This soup can be store in the refrigerator for about 3 days.

- 1 grater
- 1 bowl soaking rice

- 1 cup rice
- 1 small green chilly optional
- 1 teaspoon lemon juice
- 3-4 cups Water
- 1 teaspoon sesame oil
- Salt and Black Pepper
- 1 twig cilantro leaves
