Wash, dry and grate beet. I have grated it thin. You may grate thin or thick as per your preference

In a large bowl, whisk curd to make it smooth. Add grated beets, black pepper, and pink slat. Mix well. Make sure to use fresh curd.

The beet raita would be creamy and vibrant due to the pink color of beets.
