Simple recipe to make stove top Veg Pumpkin rice that are Amazingly Delicious, flavorful and Fluffy 

PREP TIME:  5 min

Jeera, black pepper Ghee basmati Rice Bell pepper onion, garlic, tomato Green chili, red chily powder, turmeric powder pumpkin raw coconut milk

COOK TIME: 20 MIN

INGREDIENTS

Step 1

Soak rice in a large bowl.Chop veggies as you desire.

In a heavy bottomed wok, heat ghee and add cumin, black pepper.

add onion, garlic, green chilies.

add bell pepper, tomatoes and cook with lid for about  2 min.

add chopped pumpkin, spice, salt and cook till it's almost done.

Add coconut milk and cook for 3-4 min on slow flame.

Add rice and water and slow cook with lid on for about 15 min or till tender.

Step 7

Almost cooked rice. Fluffy and flavorful. Cook till water is absorbed.

The delicious pumpkin rice is ready. Serve with curd, pickle or curry of your choice.
