Step 1

Sort the dry bathua leaves and chop as desired. Wash to clean the mud. Soak in a large pot of water and use colander under tap.

When leaves are washed, let them sit in colander to drain excess water.

Slice the potatoes as you like. Heat mustard oil in a wok and slow fry the potatoes.

Add the washed, drained bathua leaves when potatoes are fork tender along with spices an salt.

Cook with lid on on slow flame for about 5-8 min or till water from bathua is absorbed.

Serve the hot Aloo bathua saag with paratha or chapati and curd!
