Gather the ingredients for making Stuffed garlic bread.
Mix warm water and sugar in a bowl. You may take around 1 cup water. We may add more water later as and when needed.
Add yeast to the water sugar mix.
Mix well and let it rest for 5-10 min. We use warm water as it helps yeast to get activated.
You may observe that the above water-yeast-sugar mix has bubbles on the top surface. That indicates that the mixture is ready for use. It may give a weird aroma but you need not worry as its a temporary thing.
Take a large bowl for kneading the dough for bread. Add Maida, Salt, Baking powder.
Add yeast water mixture and knead the dough. It takes lot of punches and you have to go through the sticky process. But need not worry as the end result is great!! You may add more flour in batches, if its too sticky and can also use oil on hands to avoid sticky hands.
The final dough looks like as shown. You may cover it and keep it for fermentation anywhere between 30 min- 2 hours. It all depends upon the temperature conditions. We are having peak summers so it took just 20 min for it to double up the size.
Once fermented, it should double up the size. So it would be filled with air.
Punch it and knead again for five min to get the perfect dough.
Take one portion from the dough.
Roll it to make a chapati. Just not very thin.
Place the topping on any one side of the chapati. I have used corn and onions. For a better flavour you may saute the onion, corn in butter for one min. Add chopped garlic and cheese along with seasonings. I am using Amul butter so its already salted. You may add little salt if the butter is unsalted.
Apply water on the edges and seal it properly.
Apply a generous layer of butter and the seasonings over it.
Transfer it to a Steel plate. I have greased the plate with some butter.
Pre-Heat your Kadai for fifteen min. I have used normal salt. Place a steel bowl over the salt and then place your garlic bread plate.
Cover it with a lid. Make sure no heat escapes. You may put the flame on full. You can check in between once or twice. But not much as the heat loss affects the whole cooking process. For the first batch it takes around 15-25 min. The bottom is done in 15 min.
Once Bottom is done, You may reverse it to cook from the other side. Be careful as everything is super hot.
It takes another 10 min to be done from the other side.
Your Stuffed garlic bread is ready!!. Serve it hot with your choice of dips!!
