Wash all the vegetables and chop in large chunks except peas. For Bathua, leaves shall be cleaned and chopped. Bathua needs to be washed properly as its leaves are muddy. For washing greens, I use two large pans (Patila) filled with water and soak the chopped leaves in one of them for around 2 min. Mud will settle down. You may take out leaves and now put them in second Pan. Discard the water of first Pan and repeat it till you find no mud deposit at the bottom of pan. At last take a sieve and wash the leaves under running water.
Take a pan and put all veggies in it. Add water. You may take out ½ cup of cauliflower for frying. It would be added later in the soup.
Place the pan on gas and put flame full for the first boil and then simmer it and you may add little salt at this step for faster cooking. Also You may cover with a lid (lid with hole). Here ensure that lid doesnt fall off due to the pressure of steam.
The veggies in pan may take around 15 min for cooking. In the meantime, you may fry Gobhi for adding later in the soup.
I have taken my small Dal Tadka Pan for frying Gobhi. Gobhi would leave water and then gets crispy. So make it on slow gas and slow flame or else it mite get burnt up.
This is how the fired Gobhi Looks. I am fan of Gobhi. If you are not, you may replace it with Mushrooms/Paneer.
This is half done veggies as they are still crunchy.
Thats full done veggies which are mushy and soft.
You may sieve it in a big bowl as this the essence of all vegetables.
Mash it using masher for easy squeezing

You may add more water with salt, black pepper and Lemon juice. Add fried gobhi and coriander leaves. Give it a gentle boil and serve hot with your choice of breads. The Veg Clear Soup is ready. Enjoy!!.
