Besan ka Halwa

Besan ka halwa is made by roasting besan(chickpea flour) in ghee. Once roasted properly, we add Milk-water-sugar mixture flavoured with saffron(kesar) and cardamom.

Ingredients
  

  • 1 medium katori Besan
  • 1 medium katori sugar take around ½-3/4th of katori for mild to normal sugar
  • 1 medium katori Milk
  • 1 medium katori Water
  • few strands of kesar
  • 5 pieces cardamom ground it fresh
  • dry fruits optional
  • ½-3/4 medium katori Desi Ghee

Instructions
 

  • Take a heavy bottomed kadai and add ghee to it. Place gam on small burner on low flame.

  • Add besan to it. Mix well . As besan is not smooth yet, so we may add more ghee.

  • Add some more ghee and let ghee melt and mix them well.

  • Now the besan and ghee have mixed well and the consistency is smooth. It take around 1-2 min in this process.

  • While we saute besan and ghee, we can make chashni using sugar, water and milk. Make sure that gas is on low flame and keep sauting the besan ghee mixture in between

  • Add water around one portion and milk one portion to sugar in pan.

  • You may add saffron and cardamom in this mixture and keep some for adding later.

  • Your besan ghee mixture would be bubbly now. Keep Sauting it.
  • It takes around 10-15 min to get the besan of perfect color. When you would be sauting, the color change would be seen. Keep mixing well so that the whole mixture gets roasted. Now you can feel the kitchen aromatic with besan.
  • Once roasted properly, it would leave the sides of kadai and ghee would be at top and color would be darker. A small mesh like would appear on top layer of it. Then you may slowly add milk-water chashni. Keep sauting so that no lumps are formed.

  • Keep stirring and adding the milk side by side.
  • Besan would soon absorb the milk and it would become one smooth lump.

  • Once you get that texture as shown, you may switch off the flame. Remember to keep flame on low throughout the process.

Notes

You may add milk only or water only. The color and taste would differ but it solely depends on how you like it.
