Perfect Creamy Coconut Red Lentil Soup-Vegan Gluten Free.

PREP TIME: 15 min

Raw red lentils (wash and soak fo 10 min) onion, tomato, garlic cilantro  lemon juice olive oil coconut milk water salt  black pepper

Step 1

Wash and soak raw red  lentils in a large bowl for about 10 min.

In a pressure cooker, heat olive oil. add cumin, garlic and onion. cook for a min on slow flame.

Add tomatoes, carrots with spices and salt and cook for 2 min.

Add coconut milk and cook for one min on slow flame.

Step 5

add soaked red lentils and make sure to discard the water used for soaking.  Add fresh water for pressure cooking and  add water to soak lentils  up to one inch deep.

Step 6

Pressure Cook for 2 whistles on full flame and simmer for 3-4 min. Let it cool off and add water if needed.

Serve the delicious Coconut Red Lentil Soup with carrots!
