Step 1

wash and Slice eggplants (1/2 inch thick), not very thin or very thick. Wash the sliced eggplants. Pre heat air fryer at 190 deg C for 10 minutes, while you prep.

In a large bowl, make a smooth batter of gram flour (besan), salt, spices, olive oil.

Step 3

Soak eggplant slice in the batter and place it in greased air fryer at gaps.

Step 4

Air fry the eggplants for 10-12 min in batches (if you have more slices) and make sure to apply olive oil at the top of slices too.

Serve the Air fryer Eggplant Fritters without breading with tomato sauce or any dip of your choice!
