- The Best Sweet Potato Pie Ever!
Ingredients
- Sweet Potato- Fresh sweet potato works best for this recipe. I have used pink/purple skinned and boiled it for one whistle. You may use any local variety.
- Wheat Flour- I love using wheat flour in all my recipes. The crust with whole wheat comes out perfect browned. You may use gf flours to make this pie gluten free. All purpose flour would work in same ratio.
- Ghee- is my favorite ingredient and takes baking dish to another level. If you are vegan or don't like ghee, feel free to use coconut or almond oil.
- Sugar- I have used white granulated sugar. For low carb pie, you may use Stevia.
- Milk- dairy milk works great. For vegans, any dairy free milk would work. The quantity may have to be a bit adjusted as the coconut milk tends to be thicker than the dairy milk.
- Milkmaid- though optional, I added it to have a creamy consistency in the pie filling. You may skip it or replace with cream.
- Cinnamon and Cardamom powder- are the perfect choice for spices. You may add ginger powder, nutmeg as well.
- Baking powder- Though optional, baking powder is the leavening agent that adds enough volume and texture.
- Salt- adds a perfect balance to this baked pie.
Variations
- Vegan Sweet Potato Pie- The same recipe can be made vegan by replacing milk with dairy free milk and substituting ghee with any vegan oil.
- Crustless Sweet Potato Pie- If you wish to make a quick pie for dessert, you may skip making the crust and have a crustless pie.
- Add another ingredient- You may garnish the pie filling with flaky almonds, pecans or walnuts.
- Add another fruit- The same recipe would work with any other fruit like apple, banana or berries.
Expert Tips
- Blind Baking of the wheat tart may need a quick check or else the tart would be a bit hard. If you wish to have a soft and juicy crust, you may skip the bling baking and bake both tart and filling together.
- The filling should not be runny or else the bottom of the pie would be very soggy.
- I have added little ghee to the wheat dough to make it smooth. Since wheat flour is dense, the crust would be crunchy. If you like creamy texture, add more ghee while kneading the dough.
- The wheat dough for the crust shall not be loose or else the crust would not hold a proper shape. You may keep dough at rest for at least 15 min. Making it a day before is also good.

Recipe Overview
This recipe of baked egg free sweet potato pie is elegant and super easy. Boil the sweet potato. Cool, mash and blend with sugar, spices, milk or milkmaid. Make a wheat dough slightly tight than usual. This makes the tart shells.
I have baked them blind for 2-3 min in OTG. (This means that baking the wheat tart without any filling). That gives the perfect texture and shape to the pie. If you dont have a tart utensil, You may use any baking bowl. I had mini ones available so I used them.
Then bake the tart shells with the filling !!
If you like the soft pie shell, you may skip the blind bake step and bake them at one go!
Detailed Recipe
1) Wash sweet potato under tap. Roughly chop in two-three chunks depending upon the size. Boil for 2 whistles on full and simmer for 2-3 min. Open when cools off, peel it off and keep aside.
2)In the meantime, we may prepare the pie/ tart shells. I have used wheat flour to make the dough. The dough shall not be loose like bread rather slightly stiff one like poori or else the pie wont take the shape. Take wheat flour. Add desi ghee (1.5tbsp), little salt, baking powder and knead using water little by little.
Gradually the dough gets collected. It becomes one complete ball. Cover it with a cloth or lid in a bowl.
3)Blend the boiled and cooled sweet potato using a fork in a large bowl. Add spices and sugar and mix well. Add desi ghee. Here Vegans can add any oil. As you must have noticed its dry. For the pie, we wish a smooth consistency. I have added Dairy milk little by little. Keep adding and mixing so that it doesn't become too runny. Around 1-2 tablespoon was okay for me. Vegans can add coconut milk or any other substitute.
Add 1 tablespoon of Milkmaid. This is optional and one may just add more of the milk. Batter looks smooth
4) Our dough must be ready. Divide it into equal parts and Place one part in each of the tart shell. If you dont have any, you may use any baking bowl. Stick the dough to the edges with hand movements and create a space for the filling along.
I had baked the empty pie shells for 2-3 min in OTG at 200 degrees. Mine is old OTG and works quickly. You may skip this step if you want a soft crust. Add the fillings to the pie-shells. Bake them for 10 min at 200 degrees in OTG. You may do the knife-clean test.
5) Enjoy your evening with these delicious sweet potato pie!!

Sweet Potato are a bundle pack of fiber and nutrition. Being rich in Vitamin A, B, C, iron, calcium, they are a great food that maintain your gut-health too.
They are rich in starch and are fat-causing food is purely a myth!
In fact, they are not that starchy as our potatoes and for losing weight they can be considered a healthy in-between meal option. They have less calories than a potato. They have high water-content and hence maintain metabolism of body.
One may roast them and add spices with lemon juice!
Another Myth that surrounds Sweet potato is that diabetic should not have it!
Sweet potato has carbs like chapati, potato and other foods have. Does that mean a diabetic can't have chapati and aloo subji??
A Big No!
Sweet Potato doesn't have empty calories like a candy. Its a fiber rich food and releases sugar slowly so it instead helps control the sugar levels and keeps you full for longer. It won't hurt the diet of either a diabetic or a weight-loss plan. Moderation is the key here.[1]

Very hard to understand. It has ghee in the crust and the filling but doesn't say how much in each.

Hey Brenda!
Thanks for the comment. About your query, the total desi ghee used in this recipe is Approx 2 tbsp. While making the dough for the crust, I have added about 1.5 tbsp desi ghee. Then that dough is divided into two equal balls and pie crust is made using it. The sweet potato mixture has 0.5 tbsp of desi ghee. I greased the pie shells with little ghee as well. I will update this in the post soon. Let me know if you have any other queries. Hope it helps. Happy Baking!
