Ingredients
For The Whole Wheat Pie Crust
- Wheat Flour- I love using wheat flour in all my recipes. This crust with whole wheat comes out perfectly browned. You may use gluten-free crust to make this pie gluten-free. All-purpose flour would work in the same ratio. You may also make a graham cracker crust to speed up this recipe.
- Ghee- While vegan butter or coconut oil can be used to make a vegan version, I prefer using Ghee and it does justice to baked desserts.
- Baking powder- Though optional, baking powder is the leavening agent that adds enough volume and texture.
- Salt- Little salt balances the flavor of the pie crust.
For The Sweet Potato Filling
- Sweet Potato- Fresh sweet potato puree works best for this recipe. I have used purple sweet potatoes as they are locally available and are naturally sweet. You may use any type of sweet potatoes as per your preference. Bake it or boil it to make the fresh puree.
- Ghee- Use salted butter or coconut cream if you don't like ghee in baking.
- Sugar- I have used white granulated sugar. You may use light brown sugar. For low-carb pie, you may use Stevia.
- Milk- I have used Low-fat Dairy Milk. You may use Full-Fat coconut milk, oat milk, soy milk or almond milk to make this pie vegan.
- Milkmaid- though optional, I added it to have a creamy consistency in the pie filling. You may skip it or replace it with heavy cream or coconut cream.
- Cinnamon and Cardamom powder- are the perfect choice for spices. You may add ginger powder, pumpkin spice, and nutmeg as well.
Variations
- Vegan Sweet Potato Pie- The same recipe can be made vegan by replacing milk with dairy free milk and substituting ghee with any vegan oil.
- Crustless Sweet Potato Pie- If you wish to make a quick pie for dessert, you may skip making the crust and have a crustless pie.
- Add another ingredient- You may garnish the pie filling with flaky almonds, pecans or walnuts.
- Add another fruit- The same recipe would work with any other fruit like apple, banana or berries.
Expert Tips
- Blind Baking of the wheat tart may need a quick check or else the tart would be a bit hard. If you wish to have a soft and juicy crust, you may skip the bling baking and bake both tart and filling together.
- The filling should not be runny or else the bottom of the pie would be very soggy.
- I have added little ghee to the wheat dough to make it smooth. Since wheat flour is dense, the crust would be crunchy. If you like creamy texture, add more ghee while kneading the dough.
- The wheat dough for the crust shall not be loose or else the crust would not hold a proper shape. You may keep dough at rest for at least 15 min. Making it a day before is also good.

Storage Suggestions
We didn't have any leftovers. If you have any, store them in a dry airtight container and place them in the refrigerator. Sweet potato pie can be stored in the refrigerator for up to 2 days. If the pie has any whipped cream or meringue toppings, these may start to break down after a day or two in the fridge, so be mindful of that.
How To Make Eggless Sweet Potato Pie
Step 1 Wash, Boil, Cool
Since sweet potato is a root vegetable, wash it under tap water to remove dirt. Roughly chop into two to three chunks depending upon the size. Boil for 2 whistles on full and simmer for 2-3 min. Open the lid, when cools off, peel it off and keep it aside.
Step 2 Prep The Pie Crust
In the meantime, we may prepare the pie/ tart shells. I have used wheat flour to make the dough. The dough shall not be loose like bread but rather slightly stiff like poori or else the pie won't take the shape. In a large bowl, add wheat flour, desi ghee (1.5 tbsp), a little salt, and baking powder, and knead using water little by little.
Gradually the dough gets collected. It becomes one complete ball. Cover it with a cloth or lid in a bowl. If you are not comfortable kneading the dough by hand, you may use a stand mixer. If you like buttery crust, I would suggest adding vegan butter or more ghee.
Step 3 Prep The Sweet Potato Filling
Blend the boiled and cooled sweet potato using a fork in a large bowl. Add spices, ghee, and sugar and mix well. As you must have noticed it's dry. For the pie, we wish a smooth consistency. I have added Dairy milk little by little. Keep adding and mixing so that it's smooth and not too runny. Around 1-2 tablespoons was okay for me. Vegans can add coconut milk or any other substitute.
Add 1 tablespoon of Milkmaid. This is optional and one may just add more of the milk. Batter looks smooth
Step 4 Bake The Pie Crust
Our dough must be ready. Divide it into equal parts and Place one part in each of the tart shell. If you dont have any, you may use any baking bowl. Stick the dough to the edges with hand movements and create a space for the filling along.
I baked the empty pie shells for 5 min in OTG at 200 degrees. Mine is an old OTG and works quickly. You may skip this step if you want a soft crust. Add the fillings to the pie-shells. Bake them for 10 min at 200 degrees in OTG. You may do the knife-clean test.If you are using a modern oven, you might need another 10-15 min to get the baked pie.
Step 5 Serve It

Equipment
- 1 Large Bowl

- 1 Pressure Cooker
Ingredients
For the Sweet Potato Filling
- 1 medium sweet potato boiled
- ¾ cup Wheat flour
- 1 tablespoon Desi ghee
- 1.5 tablespoon sugar
- 1.5 teaspoon cinnamon and cardamom powder
- 1 tablespoon milkmaid optional
- 1-2 tablespoon milk can replace with vegan milk
For the wheat Pie crust
- 1 tablespoon desi ghee
- ¾ cup wheat flour
- a pinch baking soda or powder optional
- a pinch salt
- 3-5 tablespoon water for kneading

Very hard to understand. It has ghee in the crust and the filling but doesn't say how much in each.

Thanks for the comment. About your query, the total desi ghee used in this recipe is Approx 2 tbsp. While making the dough for the crust, I have added about 1.5 tbsp desi ghee. Then that dough is divided into two equal balls and pie crust is made using it. The sweet potato mixture has 0.5 tbsp of desi ghee. I greased the pie shells with little ghee as well.
