Strawberry Cheesecake Bites are a simple and delicious treat you can make in minutes. Just take Ragi biscuits or Graham Crackers, spread a dollop of cream cheese, top with dried strawberry and pistachios and we are done!!
I am passionate about curating quick and easy recipes that are healthy too. My daughter loves berries and from a near by shop, we procured dried strawberries that was imported as India don't grow them here. Since then, I was finding ways to use them for a quick dessert. This is such an easy way to get picky eaters have fruits- dried or fresh.
There are different ways in which this recipe can be made, like: make a classic style graham crackers mixed with melted butter as a base layer and spread the cream cheese or cream as the next layer and then top with fresh or dried strawberries. Feel free to do an experiment.

Ingredients
- Ragi Biscuits- I have used a local brand- Britannia for Ragi Biscuits. They have a slightly nutty and earthy flavor and the best thing is they have no added suagr. Feel free to use Graham Crackers or digestive biscuits.
- Cream Cheese- Any good quality cream cheese works well. I have used Pinar Cream Cheese. I have tried several brands for it and this is by far the best. amazing creamy texture and you don't have to keep at room temperature for softening as it's always spreadable. Use vegan cream cheese for vegan swaps.
- Toppings-Dried or fresh strawberries, blueberries or any fruit/ dry fruit of your choice. I have used pistachios and dried strawberries.
How To Make Strawberry Cheesecake Bites
Step 1. Prepare Ingredients
Gather your ragi biscuits, cream cheese, and dried strawberries.
Step 2. Spread Cream Cheese
Take a ragi biscuit and spread a generous layer of cream cheese on top using a small spatula or butter knife. Top it with a dried strawberry and roughly chopped pistachios. Gently press it down so it sticks to the cream cheese.
Repeat the process for all your biscuits, creating as many bites as you need.
Step 3. Serve and Enjoy
Arrange the Strawberry Cheesecake Bites on a serving platter. They’re ready to serve immediately!
Optional: Chill for a Firmer Texture:
For a firmer texture, place the bites in the refrigerator for 10-15 minutes before serving.

- For added flavor, you can drizzle a bit of honey or sprinkle some crushed nuts on top of the dried strawberry.
- Make sure to cover the strawberry bites with a large plate that doesn't disturb the toppings, when keeping in the refrigerator.

- 3 tablespoon cream cheese any good brand works well
- 12 piece dried strawberry use fresh or dried fruit
- 10-12 pieces Pistachios any nut works well.
