I have always been a fan of crispy and spiced nuts. Can't get enough of these nuts on holidays like Diwali. It's a culture in India to give sweets and nuts on Diwali. Back when I was a kid, it was just a segmented box with 3-4 nuts. These days we get variety of flavored nuts in amazing packing.
It was fun to make these spicy walnuts dunked in a mix of maple syrup, black pepper, black salt, nutmeg, little bit of olive oil and chilly flakes. You can always experiment with the spices and see how it turned out for you.
This quick snack was a hit in the family and is a great choice for snacking or adding to salads and can be served as a party appetizer!

- Maple Syrup
- Black Salt- This kala namak works like a magic for adding savory flavor.
- Black pepper
- Chilly flakes
- Olive oil
How to Make Spiced Walnuts
Step 1. Prepare the walnuts
I have a bowl of walnuts and I show them sun for 15 minutes for removing any odour. While you prep, you may heat OTG at 100°C for about 5-10 minutes.
Step 2. Mix the Spices
In another bowl, combine black salt, black pepper, nutmeg, red chili flakes, maple syrup, and just a little olive oil.
Step 3. Coat the walnuts
Pour the seasoning mix over the walnuts and toss well to coat each piece evenly. Drizzle with the rest of the olive oil.
Step 4. Roast the walnuts
Spread the coated walnuts on a baking tray in a single layer on a greased parchment paper and roast for 5-8 minutes in OTG, stirring halfway through. Keep an eye as maple syrup will start bubbling up. That's the time when you should switch off the OTG or the walnuts may get over-roasted.
Step 5. Cool and serve
Let the roasted walnuts cool completely, and enjoy as a snack or add them to your salad or desserts.
Expert Tips
- I have used OTG and it is very quick in roasting. Roasting walnuts in an oven typically takes about 10-12 minutes, which is longer than in an OTG. I think OTG took about 5-8 minutes with 10 minutes of pre heating.
- Keep a watch when maple syrup starts caramelizing as you may not like charred flavor.
- Make sure that the spices are coated well on each walnut piece.
- Let the walnuts cool off before transferring to jar for storage.
- They can be stored in an airtight container for up to 2 weeks at room temperature.
