Ingredients
- Potatoes-I have used russet potatoes as they turn out crispy. You may use Yukon Gold variety as well. The same recipe can work with Sweet Potatoes.
- Broccoli-Fresh raw broccoli works best. The florets come out easily by hand and don't need chopping. The same recipe can be made with cauliflower too.
- Olive Oil-Use high-quality extra virgin olive oil for a rich taste. Coconut oil and avocado can be good too.
- Cream Cheese-Use good quality vegan cream cheese. You may blend silken tofu with lemon juice and little dairy free milk as subs.
- Black Pepper-Freshly ground black pepper adds a earthy flavor. You may use white pepper or red pepper flakes for a spicy kick.
- Oregano-While you may use fresh oregano, I have used dried oregano to add an Italian touch to this recipe. You may use thyme, rosemary or cilantro as well.
- Salt- I have used normal table salt. Fine sea salt, kosher salt, Himalayan pink salt work good.
How To Roast Broccoli and Potatoes in Oven
If you don't have an air fryer or don't wish to use it for this recipe, you may go for roasting broccoli and potatoes in an oven. While you prep, Preheat the oven to 425°F (220°C).
Line a large baking sheet with parchment paper or lightly grease it to prevent sticking.
In a mixing bowl, combine the broccoli florets and potato chunks with oil and spice. Spread the seasoned broccoli and potatoes in a single layer on the prepared baking sheet. Make sure they are not crowded to allow for even roasting. Place the baking sheet in the preheated oven and roast for about 25-30 minutes, or until the vegetables are tender and have developed a nice golden brown color. You can flip the veggies halfway through the cooking time for even browning.
How To Make Air Fryer Broccoli and Potatoes
Step 1 Wash, Dry and Chop
Wash the broccoli floret and potatoes. Peel the potatoes and slice them as you like. Make sure not to slice them in more than ¼ th inch thickness or else they will be raw from within.
Remove the stems from broccoli and pick the small florets by hand. You may chop them too. While you prep your veggies, preheat Air fryer at 190 ℃ for 5-10 min.
Step 2 Mix with Spices
In a medium bowl, add the chunks of potato and broccoli florets. Drizzle olive oil over it along with spices and salt. Mix it well.
Step 3 Air fry Broccoli
Spread the bowl contents in the air fryer basket and air fry for about 10 min at 190 ℃. If you don't like very browned or crispy broccoli., either you may add it later or take them out after first 10 min of air frying. Potatoes take a bit more cooking time than broccoli. Leave them for another 5 min or till browned.
