    If you are looking for a humble side dish that is packed with nutrition and flavor, you must try this simple recipe of Air fryer Broccoli and Potatoes. Made with easily available ingredients and roasted to perfection, this air fryer version of fried broccoli and potatoes is a charm to make. I couldn't imagine gathering it so quickly.

    The crispy edges of potatoes and browned crunchy broccoli blended with flavors that come from melted vegan cream cheese, drizzle of olive oil, and black pepper is amazingly delicious.

    Team this easy air fryer broccoli and potatoes with rice, and sour cream or dunk them in pita bread for a hearty meal!     Ingredients

    • Potatoes-I have used russet potatoes as they turn out crispy. You may use Yukon Gold variety as well. The same recipe can work with Sweet Potatoes.
    • Broccoli-Fresh raw broccoli works best. The florets come out easily by hand and don't need chopping. The same recipe can be made with cauliflower too.
    • Olive Oil-Use high-quality extra virgin olive oil for a rich taste. Coconut oil and avocado can be good too.
    • Cream Cheese-Use good quality vegan cream cheese. You may blend silken tofu with lemon juice and little dairy free milk as subs.
    • Black Pepper-Freshly ground black pepper adds a earthy flavor. You may use white pepper or red pepper flakes for a spicy kick.
    • Oregano-While you may use fresh oregano, I have used dried oregano to add an Italian touch to this recipe. You may use thyme, rosemary or cilantro as well.
    • Salt- I have used normal table salt. Fine sea salt, kosher salt, Himalayan pink salt work good.

    How To Roast Broccoli and Potatoes in Oven

    If you don't have an air fryer or don't wish to use it for this recipe, you may go for roasting broccoli and potatoes in an oven. While you prep, Preheat the oven to 425°F (220°C).

    Line a large baking sheet with parchment paper or lightly grease it to prevent sticking.

    In a mixing bowl, combine the broccoli florets and potato chunks with oil and spice. Spread the seasoned broccoli and potatoes in a single layer on the prepared baking sheet. Make sure they are not crowded to allow for even roasting. Place the baking sheet in the preheated oven and roast for about 25-30 minutes, or until the vegetables are tender and have developed a nice golden brown color. You can flip the veggies halfway through the cooking time for even browning.

    How To Make Air Fryer Broccoli and Potatoes

    Step 1 Wash, Dry and Chop

    Wash the broccoli floret and potatoes. Peel the potatoes and slice them as you like. Make sure not to slice them in more than ¼ th inch thickness or else they will be raw from within.

    Remove the stems from broccoli and pick the small florets by hand. You may chop them too. While you prep your veggies, preheat Air fryer at 190 ℃ for 5-10 min.

    Step 2 Mix with Spices

    In a medium bowl, add the chunks of potato and broccoli florets. Drizzle olive oil over it along with spices and salt. Mix it well.

    Step 3 Air fry Broccoli

    Spread the bowl contents in the air fryer basket and air fry for about 10 min at 190 ℃. If you don't like very browned or crispy broccoli., either you may add it later or take them out after first 10 min of air frying. Potatoes take a bit more cooking time than broccoli. Leave them for another 5 min or till browned.

    Step 4 Serve It

    Serve the crispy and browned Air fried Broccoli with Potatoes with vegan cream cheese, a dash of lemon juice, sour cream or have them as is for a quick side dish.

    Expert Tips

    • Cut your broccoli and potatoes into evenly sized pieces. This ensures uniform cooking.
    • After washing the broccoli and potatoes, make sure to pat them dry with a clean kitchen towel or paper towel. Excess moisture will not make them crispy.
    • Midway through the cooking time, shake the air fryer basket or flip the veggies for even cooking and browning.
    • Air-fried foods are best enjoyed right away to retain their crispiness.
    • While I air fried both broccoli and potatoes together in air fryer basket, I realized that broccoli cooks faster than the potatoes. You may roast potatoes first for 10 min and then add broccoli later, especially if you dislike crispy broccoli. The other method can be to air fry them separately and use parchment paper to avoid too much browning.

    Recipe FAQs

    Why does my broccoli burn in the air fryer?

    That's because broccoli cooks faster from out than within. If you air fry it with other veggies, you may add broccoli later or add some water over it to avoid quick browning.

    Why soak potatoes before air frying?

    While I haven't soaked potatoes before air frying, but doing that helps them become crispy.
