    Crispy Air Fryer Banana Chips made with thin raw banana slices, brushed lightly with coconut oil, and tossed in salt and turmeric until golden.

    Growing up as a North Indian kid, our only chip option was Uncle Chips. I never had banana chips until I visited a South Indian store near my college by chance. I did not imagine I would love them so much, but I started buying all sorts of namkeen from that store, and I still do.

    In fact, when I visited Tamil Nadu this year, I bought Idli Podi, Varki, South Indian Mixture, and banana chips.

    Before owning an air fryer, I used to make these deep-fried only. Now, these Air Fryer Banana Chips are crispy just like deep-fried with less oil. Just slice raw bananas thinly, soak them in turmeric salt water, and dry. Brush them with a little coconut oil, and toss them with salt again, and air fry. Simple. Right?

    Much like making Air Fryer Cucumber Chips, charred carrots in air fryer, or beet chips, the air fryer is a quick rescue when you want a savory snack with minimal prep.

    How To Make Air-Fried Banana Chips

    Step 1. Peel, Slice, and Soak Banana

    Peel the raw bananas and slice them thin. You can use a mandoline slicer to get even, thin slices so they crisp up uniformly.

    Soak sliced banana pieces in a large bowl filled with salt and turmeric powder.

    Tip

    Don't soak the raw banana slices for more than 15 minutes. It will make them soggy.

    Step 2 Dry Banana slices

    Don't rush this step. Let the banana slices dry over a kitchen cloth or tissue paper. They should be dried completely before you air fry or the chips wont be crispy.

    My first batch was a bit rushed, and I realised it was not crispy.

    Step 3 Air Fry Banana

    I learned while testing this recipe that air frying twice helps to retain crispiness. So, to begin with, I preheated the air fryer at 180°C (350°F) for 5 minutes when the banana slices had almost dried.

    Tip

    Drying banana slices can take different times depending on the weather. In summer, it takes about 20 minutes or so when kept over a tissue.

    Then, tossed them with a little coconut oil and salt. Spread them in a greased air fryer basket and air fry at 180°C (350°F) for about 5-7 minutes or till done. At this stage, take out the thin slices that are done, but leave the thick ones, which may be raw from inside.

    Wait for some time (say 5 minutes) and again air fry for another 2 minutes. Alternatively, re-air fry just before serving.

    Step 4 Serve It

    Expert Tips

    • Drying is an important step. Any moisture left on the slices will cause them to steam instead of crisping up.
    • If the chips lose their crunch after cooling, put them back into the air fryer at 180°C for 2 to 3 minutes to draw out any trapped moisture.
    • Let the chips cool completely to room temperature on a wire rack or plate. Storing them while warm creates steam in the container, making them soggy.
    • Thick slices will stay soft in the center and turn chewy after they cool down.
    • You can store them in an airtight container at room temperature for up to two weeks. Make sure the container is completely dry and kept in a cool place away from direct sunlight.

    Why are my banana chips not crispy?

    This happens if the banana slices are cut too thick or if they are piled on top of each other in the air fryer basket, which makes them steam instead of fry. It can also happen if you store them in a jar before they have cooled down completely, as the trapped heat creates moisture that makes the chips soft and chewy.

    Can I dehydrate bananas in an air fryer?

    Yes, you can use the low-temperature dehydrate setting (around 60°C) for 4 to 6 hours to dry them out completely. Alternatively, you can also sun-dry the slices by spreading them on a clean cloth under direct sunlight for 2 to 3 days until all the moisture evaporates.

    Why did my banana slices turn black before cooking?

    Yes, you can air fry them completely oil-free, but they will look dry and have a slightly chalky texture. Brushing or tossing the slices with just one teaspoon of oil helps them get a much better crunch and golden color.
